A cake you can make days in advance...it gets moister over time!

Recipe Ingredients for Jewish Apple Cake - Cupcakes

3 cups all-purpose flour
4 eggs
2 1/2 cups sugar
3 teaspoons baking powder
1/2 teaspoon salt
4 apples
1 cup vegetable oil
1/2 cup orange juice
2 1/2 teaspoons vanilla extract
5 teaspoons white sugar
2 teaspoons ground cinnamon

Recipe Directions for Jewish Apple Cake - Cupcakes

  1. Peel and dice the apples - put half into the mixture and set half aside.

  2. Combine all other ingredients in a large mixing bowl.

  3. Spoon into cupcake tins, about 3/4 of the way full. Top each with remaining diced apple and sprinkle with sugar and cinnamon.

  4. If made as a cake, this should bake for 1 hour and 15 minutes - but as cupcakes, you will most likely need less time.
