Easy and delicious, these latkes are my family's tradition during the holidays! Eat them on top of a piece of rye or pumpernickle toast; add butter, jam, jelly, sour cream, or apple sauce, or use as a small side for dinner.

Recipe Ingredients for Jess's Latkes

8 small baking potatoes, peeled
1 cup flour
1/8 cup salt
1/8 cup pepper
1 cup vegetable oil for frying, estimate

Recipe Directions for Jess's Latkes

  1. Put potatoes through a Cuisinart to shred. After you shred them all, put it back into the Cuisinart with salt and pepper and pulse until smooth.

  2. Add flour to soak up some of the liquids (not too much! you want it semi-coating and dripping off your spoon.

  3. Heat a pan with oil, do a very small tester to see if the ratio of salt/pepper/flour makes them tasty. Add more if needed.

  4. Use a tablespoon to gently spoon batterfuls into your pan, rotating them once they start to brown, flipping and cooking till browned on both sides.

  5. Keep warm in the oven until read to serve.
