A great snack for the lunch box. I swapped sugar for low calorie sweetner and used wholemeal flour.

Recipe Ingredients for Jess's banana oat muffins

3/4 cups rolled oats
1 tablespoon baking powder
3/4 cup organic flour
1/2 tsp baking soda
1 tsp ground cinnamon
1/4 cup brown sugar
2 egg whites
1 cup banana
1/4 cup yoghurt
1/4 cup apple sauce
1 tsp vanilla extract
1/4 cup sultanas

Recipe Directions for Jess's banana oat muffins

  1. Preheat oven to 205 C.

  2. Mix dry ingredients in a large mixing bowl.

  3. Beat wet ingredients then fold through dry ingredients untill moist.

  4. Fill muffin cups 2/3 full.

  5. Garnish with thin slices of banana.

  6. Bake at 205 degrees for 20 minutes or untill tops spring back when pressed.
