4 ounces cauliflower
1 tablespoon parmesan cheese
1 teaspoon olive oil

  1. In large bowl, whisk eggs, egg whites, sour cream, cauliflower puree, parmesan, dash of salt.

  2. Coat large nonstick skillet with cooking spray over med-high heat. Add oil. Add egg mixture, reduce heat, and cook. Stir frequently until eggs are scrambled -- about 2-3 minutes.
