Recipe Ingredients for Jerusalem artichoke slaw

1 lb jerusalem-artichokes
1 carrot
2 T yogurt
2 T mayonnaise
1 t mustard, grainy
1/2 c parsley, chopped
2 T vinegar
1 salt to taste
1 pepper to taste

Recipe Directions for Jerusalem artichoke slaw

  1. Mix dressing and have ready: yogurt, mayo, salt, pepper mustard, vinegar. Then peel the sunchokes, one at a time, and cut into matchsticks and put them into dressing and coat as soon as you slice each small batch.

  2. Cut a carrot into matchsticks and toss to coat.
