Omit the eggs and it's Vegan Muffins! Use brown sugar or unrefined sugar or molasses or honey!

Recipe Ingredients for Jerry's Muffins

2 cups All Purpose Flour
2 cups Whole Wheat Flour
1 tbsp Baking Soda
1 tbsp Baking Powder
1/2 tbsp Salt
1 cup Molasses
1 tbsp Cinnamon
1/4 tbsp Nutmeg
1/4 tbsp Cloves
1/4 tbsp Allspice
1 cups Vegetable Oil
2 cups Soy Milk
3 Eggs
1 tbsp Vanilla
2 1/2 cups blueberries

Recipe Directions for Jerry's Muffins

  1. Mix dry ingredients in one bowl and wet in another. Make a well in the centre of the dry ingredients and pour liquid ingredients in. Mix well. Mix a little flour into the blueberries before adding. Add blueberries or other fruit and mix well. This recipe seems to benefit from a rest before being used and be kept in the walk in for future use.

  2. Bake at 350 degrees for 25 to 30 minutes or until a tester comes out clean.

  3. Makes 15 muffins.
