Serve over rice, with cucumber relish

Recipe Ingredients for Jerk Chicken

24 ounce boneless, skinless chicken breasts, lean only
1/8 tsp. Splenda
1 tsp. allspice
2 1/2 tsp. thyme
1/4 tsp. cayenne pepper
1/2 tsp. salt
1/2 tsp. pepper
2 tbsp. apple cider vinegar
2 tbsp. olive oil

Recipe Directions for Jerk Chicken

  1. combine all ingredients and marinate for at least 2 hours.

  2. Grill over med high heat approx. 15 minutes per side or until no longer pink in the center and juices run clear.

  3. Serve with cucumber onion relish over top:

  4. 1 cucumber, peeled, diced

  5. 1 small red onion, diced

  6. 1/2 packet splenda

  7. 2 T. apple cider vinegar

  8. Mix ingredients and refrigerate until serving time.
