Jennifer Brown's Whole Wheat Pumpkin Muffins

Recipe Ingredients for Jen's Whole Wheat Muffins

3 cups Whole Wheat Flour
1/2 cup Flax
1/2 cup oats
2/3 cup Turbinado sugar
2 teaspoons baking soda
2 teaspoons baking powder
1 teaspoon salt
4 teaspoons Cinnamon
2 teaspoons Ginger
1 teaspoon Allspice
1 teaspoon Nutmeg
6 large eggs
2 cups yogurt
15 oz pumpkin
1 1/2 cup canola oil
2 teaspoons vanilla extract
1/4 cup sunflower seeds

Recipe Directions for Jen's Whole Wheat Muffins

  1. Preheat oven to 350 degrees

  2. butter and flour two 12-cup muffin pans

  3. In medium bown, sift together Flour, Flax, Oat Bran, Sugar, Baking Powder, Baking Soda, Salt, and Spices; set aside.

  4. In large bowl combine eggs, yogurt, pubpkin, and oil.

  5. Beat well using a stand mixer, scraping down sides with a apatula, until everything is well blended.

  6. Add Flour mixture a little at a time, beating well after each addition, until everything is well combined

  7. Scrape down sides, and then blend in the vanilla extrace and Sunflower seeds.

  8. Pour batter into prepared muffin pans and bake in the center of a 350 degree oven for 35-40 minuted or until a toothpick inserted comes out clean.

  9. Let cool on wire rack for ten minutes, then invert onto wire racks and let wool completely.
