Jen's healthy shells, no meat, tasty but low fat!

Recipe Ingredients for Jen's Stuffed Shells

448 g x 8 jumbo pasta shells
2 cups low fat cottage cheese
2 cups fat free ricotta cheese
1/2 cup onion, diced
1 (12 ounces) diced tomatoes
1 cup canned mushrooms
1 pinch of herbs
2 cups mozzarella, part skim milk cheese

Recipe Directions for Jen's Stuffed Shells

  1. Boil water and cook shells, drain and rinse, set aside.

  2. Brown onions in sauce pan and remove.

  3. Add tomatoes and mushrooms to sauce pan and simmer over low heat.

  4. Combine all remaining ingredients in bowl, except mozerrella cheese.

  5. Scoop 2 Tbsp mixture into each shell, place into oven safe cooking dish, preheat oven to 350.

  6. Top shells with tomatoe/mushroom sauce and then sprinkle with mozerrella.

  7. Bake in oven at 350 for 20 - 30 minutes, until golden brown on top.
