Yummy way to enjoy squash when tired of just sauteed or grilled.

Recipe Ingredients for Jen's Squash Casserole

4 cup, sliced Squash, Summer, All Varieties
1 tbsp Olive Oil
4 tbsp chopped Onions
3 dash Pepper, Black
2 oz Neufchatel Cheese
2 oz Cheese

Recipe Directions for Jen's Squash Casserole

  1. Dice squash into cubes and put in square glass dish.

  2. Dice onion and combine with oilve oil and pepper and stir into squash.

  3. Cube cream cheese and mix into squash.

  4. Top with shredded cheese and bake at 350 for 10 - 15 min.
