Marinate chicken in white wine, mustard and spices of choice. We used onion and garlic powder with salt and pepper. Grill on medium high until cooked. While chicken is cooking, cut bacon into small strips or cubes and cook until rendered and drain. Mix wine, mustard, olive oil, maple syrup, and onion powder into an emulsion. Assemble spinach and lettuce carrots, either sliced, diced, or juliened, hard boiled eggs, bacon, and mandarin oranges. Slice chicken and add topping with parmesan and croutons. Enjoy.
