Recipe Ingredients for Jen's Chicken & Wild Rice Soup (1 serving = 1 cup)

2 tbsp Canola Oil
1/2 cup Celery, chopped
1/2 cup Carrots, chopped
1/2 cup Corn
1 small Onion, chopped
1 tbsp. Garlic, Minced
6 ounces Mushrooms, sliced
6 ounces Chicken Breast
1/4 cup Cornstarch
5 cups Chicken Broth
1 tsp. Curry Powder
1 tsp. Mustard Powder
1/2 tsp. Parsley
1 tsp. Salt
1/2 tsp. Pepper
1 tsp. Celery Salt
3 cups Wild Rice, Uncle Bens
2 cups Fat Free Half and Half

Recipe Directions for Jen's Chicken & Wild Rice Soup (1 serving = 1 cup)

Cook rice first in separate sauce pan. In a large pot, saute carrots, celery, and onion in oil for 5 minutes. Add mushrooms and chicken and saute for 3 more minutes. Add flour and mix well. Gradually stir in chicken broth. Bring to a boil and then add seasonings and rice. Return to a boil then turn very low to simmer, do not let the soup boil after this point or it will not thicken properly. Add Half and Half and let simmer 30 minutes to an hour. Just delicious! Even more delicious when served in a bread bowl! Yum!
