A delicious alternative to mainstream pizza, without the processed meats. My family loves it!

Recipe Ingredients for Jenny's Barbeque Chicken Pizza

4 1/2 cups flour
2 tsp yeast
1 tbls sugar
2 tbls extra virgin olive oil
2 cups water
1 1/4 tsp salt
1/2 cups barbeque sauce
2 medium potato
12 oz grilled chicken breast (2)
16 oz low fat mozzarella
6 strips bacon
4 tbls green onion
120 ml low fat sour cream

Recipe Directions for Jenny's Barbeque Chicken Pizza

  1. Crust- Combine sugar, salt, oil and yeast with the warm water. Let yeast dissolve. Add 2 cups of flour and mix with a fork, then and one cup at a time mixing with the fork until it gets too stiff, then use your hands. You may need more or less flour to make sure the dough is soft and stretchy, but not sticky. Knead, adding flour if needed, for 10 to 15 minutes. The secret to good pizza crust: the more you knead the better, and let it rise long enough. After kneading, put it back in the bowl and cover it with a damp towel and let it rise until it is twice it original size. This usually takes an hour and a half or longer. Put it some where warm, not hot, and it will rise faster.

  2. Grill the chicken, cook the bacon, grate the cheese, grill or bake the potato. As soon as the chicken comes of the grill put it in a sealed container so it stays moist.

  3. Just before the dough is ready to be rolled out, chop the chicken, bacon and green onion, slice the potato into 1/4 in. slices.

  4. Divide the dough in two lumps. Roll out the each one on a floured board and with a scant amount of olive oil on your hands, rub the inside of the pizza pan, if not using a baking stone, and place the rolled out dough inside. Spread the barbque sauce and layer with potato, chicken, cheese, bacon, green onion. Bake at 425 for 12-15 minutes.

  5. Slice each pizza into 8 slices dollop the middle with sour cream.

  6. Serve and enjoy!

  7. If you want a heathier option omit the bacon and the sour cream and decrease the cheese to 6 oz on one pizza and you will decrease the calories by 32 cal. and the fat by 2.7 grams per slice.
