A delightfully tasty dish with a lot of eye-appeal. This takes about 25 minutes prep. time and 30 minutes baking time. While the fish and asparagus cooks in the oven, a sauce is prepared and served over the cooked bundles.

Recipe Ingredients for Jenny's Asparagus Fish Bundles

4 oz orange roughy fillets (or white roughy)
20 asparagus spears (fresh and trimmed)
2 green onions (chopped)
2/3 cup chicken broth (reduced sodium) (OR white wine)
2 tablespoons lemon juice
2 teaspoons cornstarch
1 teaspoon fresh basil (or 1/4 tsp. dried basil)
1 teaspoon fresh thyme (minced or 1/4 tsp. dried)

Recipe Directions for Jenny's Asparagus Fish Bundles

  1. Wrap each fillet around 5 asparagus spears; secure with toothpicks

  2. Spray a 9" x 13" dish with cooking spray

  3. Place the fillets in the baking dish and sprinkle with sea salt and pepper

  4. Cover and bake for 15 minutes at 350 degrees

  5. Uncover and add the chopped green onions

  6. Bake an additional 15 minutes longer or until the fish flakes easily with a fork and the asparagus is crisp-tender

  7. While the bundles are cooking, prepare sauce in saucepan, combining the broth, the cornstarch, the basil, thyme, sea salt and pepper

  8. Pour the sauce over the cooked bundles and serve
