Recipe Ingredients for Jenny Joukhadar's Pad Thai

4 cups egg noodles
1 cup bok choy
1/2 cup leeks
2 cloves garlic
1/4 cup onion
1 egg
2 tbsp peanut butter
1/2 tsp olive oil

Recipe Directions for Jenny Joukhadar's Pad Thai

  1. Boil noodles till almost soft.

  2. Sautee vegetables in olive oil. Form a ring with them along outside of pan.

  3. Fry egg in middle of ring.

  4. Stir up and add peanut butter (chunky kind), allowing it to melt before mixing.

  5. Add noodles and sautee until water is removed.

  6. Serves 2-4.
