Recipe Ingredients for Jenn's Ratatouille

1 YELLOW SQUASH, CUBED
1 ZUCCINI, CUBED
1 BABY EGGPLANT, CUBED
2 ROMA TOMATO, CUBED
4 cloves GARLIC, MINCED
2 tsp BASIL, DRIED
1/4 cup ONION, DICED
1 tbsp CANOLA OIL

Recipe Directions for Jenn's Ratatouille

  1. Place squash, zuccini, eggplant, onion, garlic and oil into a large skillet.

  2. Cook on medium heat, adding small amounts of water as needed so as not to burn, until eggplant is tender.

  3. Add tomato and basil.

  4. Continue cooking on medium until all ingredients are cooked through.

  5. Serve.
