This is my first try at making an omelet, and I think I nailed it! Basic ham and cheese; no frills.

Recipe Ingredients for Jennifer's Ham and Cheese Omelet

2 eggs
1 tbs. half and half
1/4 tsp. black pepper
1/8 tsp. cayenne pepper
1/2 tsp. dried parsley flakes
1 slice American cheese
1 tbs. butter or margarine
2 slices red onion
1 clove minced garlic
1 serving Land O' Frost Smoked Ham
2 tbs. shredded cheddar cheese

Recipe Directions for Jennifer's Ham and Cheese Omelet

  1. Finely chop the slices of red onion and ham. In a small bowl, whisk together eggs, half and half, black pepper, cayenne pepper and parsley. Tear American cheese into small pieces and add to egg mixture; stir.

  2. In a small non-stick skillet, melt butter over medium-low heat; add garlic and onion. Cook until onion is translucent and garlic is fragrant; reduce heat to low.

  3. Add egg mixture to skillet. Allow egg to set slightly, and add chopped ham. Distribute cheese and ham evenly through mixture. DO NOT STIR.

  4. Allow egg mixture to set almost completely, and trifold the omelet. Flip omelet over, seam side down, and cook to desired doneness, flipping as needed. (The omelet is ready to fold and flip, when it moves as one in the skillet.)

  5. Place omelet on plate and top with cheddar cheese.
