This is Jennie's favorite omelet. Its has some heat from the peppers. For a twist, brush the pepper with olive oil and grill on the BBQ until it starts to bubble. Very light and fluffy omelet.

Recipe Ingredients for Jennie's Omelet

1 egg
1 egg white
1 tbsp milk, fat free
1 dash pepper
1 garlic clove
1/8 cup red onion
1/8 cup peppers, chile
2 tbsp olive oil
1/8 cup cheddar cheese
1/8 cup salsa

Recipe Directions for Jennie's Omelet

  1. In bowl, mix 1 egg, 1 egg white, milk and pepper.

  2. Add oil to omelet pan. Add garlic, red onion and chile peppers.

  3. Saute until done. Turn down heat and add egg mixture.

  4. Cook until egg is done. Sprinkle with cheese and top with salsa.
