Jennie's Bourbon Chicken Recipe

This doesn't taste quite like the one at the mall but it's still tasty.

Recipe Ingredients for Jennie's Bourbon Chicken

1/4 cup vanilla extract
2/3 cup water
1/2 cup soy sauce
1/4 cup brown sugar
1 tsp paprika
1/2 tsp cayenne powder
1 tbsp honey
3 cloves garlic, minced
1 tsp ginger
1 1/2 tsp garlic powder
1/4 tsp salt
1/4 tsp pepper
2 tbsp ketchup

Recipe Directions for Jennie's Bourbon Chicken

  1. Combine all ingredients (except chicken) for marinade (in blender). Set aside 1/2 cup of all this merinade in a clean jar (do not use to marinate chicken - this will be used for basting chicken during grilling) Keep refrigerated.

  2. Put marinade into ziploc bag with chicken pieces and distribute evenly. Marinate chicken for 6-12 hours (if possible) in fridge, turn occassionally.

  3. Remove chicken from marinade. Allow to sit at room temperature while heating grill.

  4. I use a toaster oven since I don't have a grill. Heat a boiler pan in the oven on broil. Add chicken to pan evenly and leave on broil with door slightly ajar. Cook 5 minutes and rotate chicken, baste chicken with marinade and cook for 5 more minutes. Repeat this every 5 minutes for about 20 or until chicken is cooked.

  5. Eat and enjoy!
