Roasted potatoes with onion & carrot

Recipe Ingredients for Jenna's roasted potatoes

1 lb red potatoes
1 medium yellow onion
2 large carrots
3 cloves garlic
2 tsp kosher salt
1 tbsp olive oil
1 tsp chili powder

Recipe Directions for Jenna's roasted potatoes

cut all veggies into large chunks & mince garlic. place everything in shallow roasting pan & drizzle with olive oil & sprinkle w/ salt & chili powder. bake covered at 400 for 20 min, then uncover & roast for another 20 minutes stirring every 5 minutes
