Jen teaches Liz how to cook some tasty quinoa

Recipe Ingredients for Jen and Liz's Quinoa Adventure

1 1/2 cup quinoa, uncooked
3 cups water
1/2 medium red onion, chopped
3/4 cup golden raisins
2 tbsp olive oil
1 tsp curry powder
1 tsp cinnamon
1 tsp garlic powder
1/2 cup cilantro, chopped
2 tbsp scallions

Recipe Directions for Jen and Liz's Quinoa Adventure

  1. Mix Quinoa and water in medium sized sauce pan.

  2. Bring to a boil, then simmer until water is absorbed (about 20 mins, similar to rice).

  3. Meanwhile, saute onions using oil if desired.

  4. Fluff with a fork and let cool.

  5. Add oil and spices, mix well.

  6. Add onions and raisin and stir, sir.

  7. Right before serving, mix in cilantro and scallions.

  8. Top with some peanut sauce if you have it.

  9. MMMMMM.. delicious.
