Recipe Ingredients for Jeff's mac & cheese--lower fat version

10 tablespoons unsalted butter
2 cups fresh bread crumbs
1 pound elbow macaroni
1 clove garlic , minced
1 teaspoon dry mustard , dissolved in 1 teaspoon water
1/4 teaspoon cayenne pepper
6 tablespoons all-purpose flour
3 1/2 cups whole milk
1 3/4 cups low-sodium chicken broth
16 oz reduced fat colby-jack cheese, shredded
16 oz reduced fat extra-sharp cheddar cheese, shredded

Recipe Directions for Jeff's mac & cheese--lower fat version

  1. Prepare macaroni according to package directions; drain.

  2. Melt 2 tablespoons of the butter and toss with the breadcrumbs. Set aside to place on top of the macaroni and cheese.

  3. Melt remaining butter. Stir all ingredients together, place in 15x11 baking dish, top with bread crumb mixture, and bake 30 minutes at 400.

  4. Let stand before serving.
