Big brother's homemade ravioli recipe

Recipe Ingredients for Jeff's Cheese Ravioli's

256 grams Sunnutai Flour
128 grams Sunnutai Flour
6 large Egg, Whole
500 grams Ricotta
160 grams Grated Parmesan Cheese
4 tbsp Parsley, Dried
1 large Egg, Whole

Recipe Directions for Jeff's Cheese Ravioli's

  1. For Dough:

  2. 3 cups flour (plus extra for rolling)

  3. 6 eggs

  4. For Inside:

  5. 1lb whole ricotta cheese

  6. 1/2 cup grated Parmesan cheese

  7. 1 egg

  8. 1/4 cup parsley

  9. 1 tsp pepper

  10. Pasta Preparation

  11. Scramble the eggs

  12. Mix flour into the eggs until a dough forms

  13. When rolling out dough use extra flour to keep the dough from sticking to the counter or the rolling pin

  14. Ravioli Preparation

  15. Mix all ingredients into bowl

  16. Roll pasta dough with rolling pin until very thin (I usually break the dough into four pieces for this process)

  17. Place one ounce scoops of ravioli filling onto dough

  18. Fold dough over the scoops of ravioli

  19. Press dough down around ravioli filling and cut from larger piece of dough

  20. Seal edges of each ravioli by pressing a fork down around the three non-folded edges

  21. Place ravioli onto a cookie sheet until ready to cook (DO NOT STACK, THEY WILL STICK TOGETHER!)

  22. Repeat until all ravioli filling or all dough is used up

  23. Get a large pot of water boiling

  24. Put all raviolis into boiling water

  25. Boil for 15 to 20 minutes. They will be floating before they are fully cooked.

  26. Test the edge of the pasta to make sure is cooked all the way

  27. Drain water, serve immediately or put them in sauce otherwise they will stick together
