A simple way to use left over home-made bread machine bread. Can replace all sugar with splenda if the taste of splenda does not bother you.

Recipe Ingredients for Jeanni's French Toast Casserole

10 slices whole wheat bread
7 eggs
2/3 cup milk
1/2 cup splenda
1/3 cup sugar
1 tsp vanilla extract

Recipe Directions for Jeanni's French Toast Casserole

  1. Preheat oven to 350 degrees. Spray 9x12" casserole with non-stick spray.

  2. Tear bread into bite size pieces and put into casserole. Should be enough bread to fully fill casserole but without being packed down.

  3. Beat eggs, milk, splenda, sugar, vanilla. Pour over bread. Sprinkle with cinnamon if desired.

  4. Bake for 20 minutes. Cut into 8 squares and serve with butter or margarine and/or syrup or sugar free syrup as desired.
