Recipe Ingredients for Jeanies Squash Soup

5 cups acorn squash
2 cups leeks
2 stalks celery
1 medium carrot
2 tbs butter
2 tsp basil
1/4 tsp cloves
1/2 tsp pepper
1/4 tsp mace
3 cups fat free chicken broth
2 cups skim milk

Recipe Directions for Jeanies Squash Soup

  1. micro squash until soft 5-10 minutes.

  2. cook vegies (chopped leeks, diced celery, diced carrot and chopped basil) in large pot on med heat with butter until leeks are soft and translucent.

  3. add spices, salt, sugar and heat for 30 seconds.

  4. add chicken stock & squash to and cook a lower heat

  5. add enough water to cover vegies

  6. cook 10 minutes until carrots are soft

  7. turn off heat and use handblender to chop vegies in pot

  8. add skim milk and simmer

  9. optional

  10. sprinkle with paprika and chives
