Recipe Ingredients for Jeanette's sweet potato/leek pancakes

2 cups yam
1 leek, washed, sliced thin
3 cloves garlic, crushed
4 T buckwheat flour
4 T water
1/4 cup sesame oil

Recipe Directions for Jeanette's sweet potato/leek pancakes

Peel and grate the yam (1 large yam); wash, dry and slice the leek (white bulb and part of the green); crush and chop the garlic; mix all with buckwheat and water. heat the sesame oil in a heavy iron frying pan. form 4 pancakes, fry until each side is brown and crisped (turning once).
