Uses any kind of wheat bran or bran cereal (fiber one works). Mixture without bananas can last in frige for 4 weeks, so you can wait for more soft bananas to come along.

Recipe Ingredients for Jaymee's 2pt Banana Muffins

1 c. Fiber one cereal
1 c. water
1/2 c. splenda
1/2 c. unsweetened applesauce
1 t. baking powder
2 eggs
2 c. nonfat plain yogurt
1 1/4 c. whole wheat flour
1 1/4 c. flour
2 c. fiber one cereal
1/2 c. chopped walnuts
3 small bananas

Recipe Directions for Jaymee's 2pt Banana Muffins

  1. Preheat oven to 400 degrees Fahrenheit.

  2. boil 1 C. water, add bran, remove from stove eye and let cool for 5 minutes.

  3. cream scant 1/2 C. applesauce, splenda, and eggs in mixer. Add yogurt.

  4. in a separate bowl, mix all dry ingredients, then fold into mixer bowl.

  5. Fold in 2 C. additional fiber one.

  6. You can add mashed bananas at this time or wait.

  7. fill muffin tins 3/4 full and cook for 20 min.
