These mashed potatoes are hearty and heart healthy. Very easy to make with a 25 minute cook time.

Recipe Ingredients for Jasmine's Smart Homemade mashed potatoes

5 medium red potatoes
4 cups water
3/4 cup fat free milk
1 salt
1 coarse black pepper
1/3 cup extra virgin olive oil

Recipe Directions for Jasmine's Smart Homemade mashed potatoes

  1. Rinse, scrub clean 5 medium red skin potatoes. Do not peel.

  2. Dice each potato into 4 Large sections.

  3. Place potatoes into pot with water and 3 tbs salt and let come to a boil for 20 minutes until soft. Do not cover.

  4. Drain potatoes of most the water and add fat free milk, extra virgin olive oil. Salt and pepper to taste.

  5. Use wire masher to mash potatoes for 4-5 minutes until thick consistency. Should be lumps.

  6. -Enjoy!
