Recipe Ingredients for Jared's Green and Refreshing Egg White Breakfast

1 tbsp Smart Balance
3 large Egg Whites
2 oz (cubed) Mozzarella, Part Skim Milk Cheese
1/4 Cup, Chopped Onions - Raw
5 (sliced) Mushrooms, Baby Bella
1/2 cup Blueberries
162 g Strawberries (about 6 Extra Large)
2 cup Lettuce, Mesclun
1 tsp Vinegar, Balsamic
1 pinch Sea Salt

Recipe Directions for Jared's Green and Refreshing Egg White Breakfast

  1. Preheat a nonstick skillet to medium-high and add 1/2 TBSP Smart Balance.

  2. Wash and slice the strawberries in half. Place in a chilled bowl. Peel and slice the banana and place in the bowl. Stick the bowl in the freezer while you prepare the rest of the dish.

  3. Throw in 1/4 CUP chopped sweet onion into the now hot skillet, toss it to get a good coating of the Smart Balance and let it sit for about 2 minutes.

  4. Throw in the sliced Baby Bella Mushrooms and Cubed Mozzarella Cheese, add a 1/2 pinch of sea salt, some fresh-cracked black pepper and toss. Let it cook for another 2-3 minutes, or until the mushrooms are slightly tender, but still firm, tossing occasionally.

  5. While the onions and mushrooms cook, arrange 2 Cups Baby Greens on about half of the plate.

  6. Add in your three large egg whites to the skillet and vegetables. Put in another 1/2 pinch of sea salt and scramble the egg whites with the vegetables.

  7. Arrange the eggs next to the greens on the plate. Drizzle about 1 TSP of good Aged Balsamic Vinegar over the greens. Serve a couple 1-2 Slices of Whole Wheat toast on the side of the plate and top with the remaining 1/2 TBSP Smart Balance. Add some fresh-cracked pepper over the greens and the eggs.

  8. Remove the fruit bowl from the freezer and sprinkle just a pinch of Splenda over the top, if desired.

  9. Serve, pour yourself a glass of milk and enjoy.
