Recipe Ingredients for Japanese-Style Curry from "Three Bowls" recipe book

2 1/2 tbs curry powder
3 tbs canola oil
2 medium onions, thinly sliced
1 tsp sea salt
1 pound mushrooms, sliced
1 1/2 pound potatoes, cut in 1 inch cubes
1 1/2 tbs cornstarch or potato starch
2 1/2 tbs tamari
1 pound firm tofu, cut into 1 inch cubes
1 cup frozen peas

Recipe Directions for Japanese-Style Curry from "Three Bowls" recipe book

  1. Whisk curry powder in 1 cup cold water in a small bowl. Set aside.

  2. Heat oil in a large pot over medium- high heat. Add onions and salt and saute, stirring occasionally until the onions are translucent, about 8 minutes.

  3. Add mushrooms and saute for about 2 minutes. Stir in potatoes and saute for a minute more. Add 4 cups cold water and curry mixture and bring to a boil. Reduce heat to low, cover, and simmer, stirring occasionally, until the potatoes can easily be pierced with a fork, about 20 minutes.

  4. Whisk the cornstarch with the tamari and 2 tbs cold water in a small bowl. Add the curry and stir gently until the sauce thickens.

  5. Gently add in tofu and peas and cook until heated through, 5 -10 minutes. Taste and adjust seasoning to your liking. Serve with small bowls of raisins and walnuts on the side.
