Creamy, mild, fruity potato salad

Recipe Ingredients for Japanese Potato Salad

3 potatoes
1 bosc pear
1 carrot
1/2 cup low fat mayonnaise
1 cucumber
1/4 cup raisins
1 egg, cooked
1/2 small onion

Recipe Directions for Japanese Potato Salad

  1. peel and slice cucumber and onion. Seed cucumber. Salt the cucumber generously and set in colander in sink or in basket of salad spinner. Set onions in large bowl of water. Let both stand at room temp while completing remaining steps.

  2. Peel carrot and potatoes. Slice carrot and cube potatoes.

  3. Place egg (raw), carrot, and potatoes in pot of water. Bring to boil. Boil 10 mins. Drain.

  4. Peel (cooked) egg. Rince cucumber. Drain onion.

  5. Combine all ingredients with mayo and mix well. Add salt and pepper to taste. Serve at room temperature or chill before serving.

  6. Serve with Tonkatsu sauce (Fruit and Vegetable Sauce)
