This recipe is from Food.com. "I've always loved that little side dish of pickled cucumber and or bean sprouts you get at many of the Japanese restaurants. I make a salad that uses both. Note: I find that letting the salad sit a few hours in the fridge helps the texture and flavors mix. In fact, I prefer this salad the next day."

Recipe Ingredients for Japanese Cucumber & Bean Sprout Salad (Food.com)

2 serving Bean Sprouts
1 tsp Salt, Table
2 serving Rice Vinegar
2 tbsp Oil, Sesame
4 serving Soy Sauce
0.25 tsp Sauce, Ready-to-serve, Pepper Or Hot
1.33 large (8-1/4" long) Cucumber, Peeled
0.13 tsp Mustard Powder
1 tsp Ginger Root
0.67 tbsp Honey, Strained Or Extracted

Recipe Directions for Japanese Cucumber & Bean Sprout Salad (Food.com)

  1. Place the thinly sliced cucumbers and fresh sprouts in a glass bowl and sprinkle with salt. Toss well and chill for 1 hour. Rinse and drain well.

  2. Put all the dressing ingredients in a jar and shake well to combine. Pour over the cucumber/sprouts, and mix well. Top with toasted sesame seeds.
