A delicious salad that's always a hit. Makes lots, so it's a great potluck choice as well. From "Company's Coming - Most Loved Salads & Dressings".

Recipe Ingredients for Japanese Cabbage Salad

3 cups cabbage, shredded
4 1/2 cups fresh bean sprouts
2 cups sliced fresh white mushrooms
1/2 cup slivered almonds, toasted
1/4 cup raw sunflower seeds
2 tbsp sesame seeds, toasted
2 green onions, chopped
85 g ramen noodles, chicken
1/2 cup olive oil
3 tbsp white vinegar
3 tbsp soy sauce
1 tbsp granulated sugar
1 tsp salt
1/2 tsp pepper
1 1/2 cups dry chow mein noodles

Recipe Directions for Japanese Cabbage Salad

  1. Put first 7 ingredients into large bowl. Toss.

  2. Asian Dressing: Empty chicken seasoning packet from ramen noodles package into jar with tight fitting lid. Add next 6 ingredients. Shake well. Makes about 3/4 cup (175 ml) of dressing. Drizzle over salad. Toss well.

  3. Just before serving, break up block of ramen noodles. Scatter over top. Sprinkle with chow mein noodles. Serves 10-12.

  4. TIP: To toast almonds and sesame seeds, spread them in a single layer in separate ungreased shallow pans. Bake in a 350 degree F (175 C) oven for 5 to 10 minutes, stirring or shaking often, until desired doneness.
