Low fat, healthy vegetable soup with protein.

Recipe Ingredients for Jan's vegetable soup

2 cups tomato sauce
1 zucchini
1 onion
1 yellow squash
1 cup chick peas
1 cup soy beans
1 eggplant
1 cups beef broth
1 cup mushrooms
3 cloves garlic
1 tbsp italian seasoning
1 tsp olive oil
1 potato
4 oz barley

Recipe Directions for Jan's vegetable soup

Saute onions, garlic in olive oil for approx 3 minutes. Dice vegetables to an even size. Add vegetables, tomato sauce and beef broth to garlic and onion base. Cook slowly for approx 1 hour on a low heat. (Or use slow cooker for 4-6 hours on low)
