Recipe Ingredients for Jannid's Tortellini with mushrooms and proscuitto

2 tablespoons extra-virgin olive oil
3 oz. prosciutto
1/2 cup onion
1 cup mushrooms
1/2 cup sun-dried tomatoes
2 garlic cloves, minced
2 tablespoons minced fresh rosemary
1/4 teaspoon red pepper flakes
2 cups arugula leaves, rinsed
9 ounce tortellini
1 Salt, to taste
1 Freshly ground black pepper, to taste

Recipe Directions for Jannid's Tortellini with mushrooms and proscuitto

  1. Heat 1 tablespoon oil in a large skillet over medium-high heat; add prosciutto slices, and cook 1 to 2 minutes per side or until crisp. Transfer to a plate lined with paper towels. Set aside.

  2. Heat 1 tablespoons oil in skillet over medium-high heat. Add diced onion and sliced mushrooms, and saute until tender. Add chopped sun dried tomatoes and next 3 ingredients, and saute 2 minutes. Add arugula, and saute until just wilted. Keep warm.

  3. Cook tortellini according to package directions. Drain and add to vegetables in skillet; toss gently to combine. Add more oil if necessary, and season with salt and pepper.

  4. 4. Crumble prosciutto, and sprinkle over pasta. Sprinkle with grated Parmesan or Romano.
