slightly modified from World's Healthiest Foods. Delicious as a lunch salad or a side at dinner. Try it with grilled meat.

Recipe Ingredients for Jannid's Tabbouleh

1 cup bulgur (dry),
1/2 medium onion, minced
2 t garlic, chopped
3 cups parsley, fresh chopped
1 medium tomato, chopped
3 tbs extra virgin olive oil
1 tbs fresh lemon juice
1/8 t sea salt
1/8 t pepper

Recipe Directions for Jannid's Tabbouleh

  1. Place 1 cup wheat bulgur and salt to taste in a bowl. Pour 2 cups boiling water over the bulgur, stir once and let sit for 15-20 minutes until liquid is absorbed.

  2. Mince onion and press or chop garlic and set aside.

  3. When the bulgar is ready, combine all ingredients and mix well.

  4. For added flavor you may want to add more olive oil and lemon juice.

  5. chill.

  6. the salt and pepper is "to taste" but the CC analyzer does not like that.
