Recipe Ingredients for Jannid's Standing Rib Roast

5 pound rib roast,
4 t garlic, chopped
1/2 t salt
1 t pepper, coarse grind

Recipe Directions for Jannid's Standing Rib Roast

  1. Preheat oven to 450 degrees.

  2. With tip of paring knife, make small slits all over the roast and insert the chopped garlic. Rub the roast with salt and pepper to taste. Place on a rack in a shallow pan. Roast for 25 minutes.

  3. Reduce oven to 350 degrees and roast til the meat thermometer registers approx 140 for med rare or higher if you want the meat cooked more. This will take approximately 1 3/4 - 2 hours.

  4. Let meat rest before slicing & serving and is outstanding served with Jannid's Horseradish Cream. If the extra 45 calories and extra fat are a concern, just use some bits of horseradish with each bite.
