Recipe Ingredients for Jannid's Southwestern Beef Tenderloin

24 cherry tomatoes
1 teaspoon olive oil
2 tablespoons lime juice
1 teaspoon olive oil
1/2 cup red onion, sliced
1/4 cup cilantro, chopped
2 teaspoons garlic, chopped
2 jalapeno peppers, [i11979?size=2]
1/2 cup feta, crumbled
24 oz beef tenderloin
1 teaspoon olive oil

Recipe Directions for Jannid's Southwestern Beef Tenderloin

  1. place cherry tomatoes on a baking sheet and drizzle with olive oil. Broil about 5 minutes or just until the tomatoes burst. Allow to cool.

  2. In a large bowl, gently combine 1 t of olive oil, lime juice, onion, garlic, jalapeno, cilantro, feta, and the tomatoes.

  3. Season with salt and pepper as desired.

  4. Rub tenderloin with 1 t of olive oil and grill on all sides about 20 minutes or until medium rare.

  5. Place meat on a cutting board and cover with foil for 10 minutes to rest.

  6. Slice the meat thin and arrange the slices around a mound of the tomato dressing.
