made with left over Jannid's Standing Rib Roast. This dish would be easy to make more vegetarian by substituting a bunch of mushrooms or eggplant for the meat and mushroom gravy instead of beef gravy.

Recipe Ingredients for Jannid's Shepherd's Pie

2 T olive oil
1 onion, chopped
6 oz mushrooms, sliced
1 1/2 pounds rib roast, approx 3 cups leftover beef roasted and diced
24 oz beef gravy
2 c peas
1 c carrots, diced
1/2 t black pepper
3 c potatoes, mashed
1/2 c buttermilk
1 egg yolk
1/2 c cheddar, shredded

Recipe Directions for Jannid's Shepherd's Pie

  1. Preheat the oven to 400.

  2. In a large pan, saute the onion and mushrooms in olive oil til tender.

  3. Add the chopped beef, gravy, and cooked peas and carrots. Season with black pepper to taste.

  4. Heat thoroughly in the pan, stir ocassionally. Transfer to large baking dish that has been sprayed with Pam.

  5. Mix the egg yolk into the mashed potatoes (calories assume that you made the mash with buttermilk and no butter) and glop the mixture all over the stew.

  6. Bake for 15 minutes then sprinkle the potatoes with cheddar and bake another 15 minutes or so until lightly browned.

  7. Serve in deep bowls.
