modified a bit from a Paul Prudhomme recipe. I use his Magic seasoning for chicken in this recipe. Add as much as you like. 3 T is a starter. Also, I recently used fresh basil instead of dried and it was awesome!

Recipe Ingredients for Jannid's Roasted Garlic and Chicken

40 garlic cloves, roasted
2 T oil
1 pound chicken breasts
1 pound chicken thighs
3 T Cajun seasoning
1/2 c flour
1 T oil
1 onion, chopped
3 t bay leaf
1 c red pepper, diced
30 oz tomatoes, chopped
1 c tomato sauce
1 1/2 t basil
2 T brown sugar
1 1/2 c stock

Recipe Directions for Jannid's Roasted Garlic and Chicken

  1. Break apart two heads of garlic but do not un-peel the cloves. Place them on a baking sheet and bake in a 400 degree oven for about 12-15 minutes or til the leaves are dry and edges start to brown. Cool naturally then peel. The peel will stick to your fingers so this is a messy but soon to be delicious job.

  2. Season chicken with one T of Poultry Magic, Blend 2 more t of the seasoning with the flour in a bowl and lightly dust the chicken.

  3. In a large skillet, heat oil over high heat and brown the chicken pieces about 4-5 minutes on each side (do not fully cook the chicken), remove and drainn on paper towels. If the oil has been absorbed add another T more, but if not, just reduce the heat to medium add the chopped onions, 2 more t Poultry Magic and bay leaves (the CC calculator only calculates "crumbled" bay leaves, why on earth I do not know, but that's how it's done, use 3 whole leaves) cook til onion is browned stirring every now and then. Add bell peppers and cook 2 more minutes.

  4. Add the tomatoes and increase the heat to high - cook one minute, stir in the tomato sauce and basil (can use 3 T chopped fresh basil instead of the dry) and cook for another minute.

  5. Add the Roasted Garlic cloves (whole!), then add brown sugar and the rest of the Poultry Magic (pre-measure it at the start of cooking and shake some in when called for). Stir in enough chicken stock to make a nice sauce that is just a little thin. Cook another minute.

  6. Add the chicken, bring to a boil then reduce heat and simmer uncovered for about 25 minutes, stirring occasionally.

  7. Taste, add more seasoning if you like. Remove bay leaves before serving.

  8. Awesome crowd pleasing dish!

  9. Great over rice!
