All ingredients should be adjusted for taste and your desired calories - less cheese equals less calories. For pepper sauce I used McIlhenney's Chipotle Tabasco - it's a bit thicker and milder than regular Tabasco and very flavorful. Use as much as you like and add it to the black bean mix too, the seasoning amounts described in the recipe are minimal. It's also very pretty with chunks of lime juice coated avocados on the top.

Recipe Ingredients for Jannid's Portobello Quesadillas

2 t pepper sauce
1 t olive oil, (I use habanero olive oil)
2 mushrooms, Portabella [i11265]
2 c spinach, torn
1/2 medium onion, finely diced
4 whole-wheat tortillas
3/4 cup cheddar, shredded (I use sharp)
4 sprays Pam
15 oz black beans
15 oz tomatoes, crushed with with chili
1/2 t chili powder
1/2 t cumin powder

Recipe Directions for Jannid's Portobello Quesadillas

  1. Heat olive oil in a large nonstick skillet over medium heat. Add mushrooms and cook, stirring occasionally, for 5 minutes. Add onion and cook, stirring, until the onion and mushrooms are beginning to brown, 5 to 7 minutes. Transfer the vegetables to the bowl and mix with your favorite pepper sauce or use a little picante sauce; stir to combine. Wipe out the pan.

  2. In a separate small pot, combine the rinsed and drained black beans with the can of tomatoes, add seasonings to taste and heat.

  3. Meanwhile, place tortillas on a cutting board. Spread 3 tablespoons cheese on half of each tortilla and top with one-fourth of the filling. Fold tortillas in half, pressing gently to flatten.

  4. Spray pam onto large non stick skillet and heat over medium heat. Add 2 quesadillas and cook, turning once, until golden on both sides (you can spray the tops with Pam before flipping), 3 to 4 minutes total. Transfer to a cutting board and tent with foil to keep warm.

  5. Repeat with the remaining quesadillas. Cut each quesadilla into wedges, top with black bean mix, and serve.
