Jannid's Pepperoni Pasta Recipe

A slimmed down comfort food. To make it the real thing use heavy whipping cream instead of half and half - and apply to your mouth sparingly. I use uncured pepperoni. Fresh cracked black pepper to taste - depends on your pepperoni. Use more if you use turkey pepperoni and make sure you reduce the calories.

Recipe Ingredients for Jannid's Pepperoni Pasta

16 oz pasta
1 T olive oil
1 onion, chopped
1 T garlic, chopped
32 oz tomatoes, chopped
6 oz pepperoni, sliced
1/2 c half and half
2 T heavy whipping cream
1/2 t black pepper (fresh cracked)
8 T parmesan cheese, grated

Recipe Directions for Jannid's Pepperoni Pasta

  1. While the water for the pasta is coming to a boil (penne works well for this but any type will do), saute the small chopped onion in the olive oil, when the onion is nearly clear, add a heaping T of chopped garlic and saute for another 2 minutes.

  2. Somewhere in here you will add the pasta to the water and boil while you finish the sauce.

  3. Add the pepperoni (sliced in to half moons), two cans of diced tomatoes (two 15 oz cans), and some fresh cracked black pepper to the onion mix and simmer until the pasta is about 2 minutes from done.

  4. Add the cream or half and half. The amount of cream/half half is a reasonable guess as I do not actually measure, I just add it til the color looks good. Lower the heat and stir a few times. If you use cream, it will thicken a bit, so if you use half and half don't add too much at first.

  5. Drain the cooked pasta thoroughly and return to the hot pot. Add the sauce and mix thoroughly.

  6. Serve with a T of grated cheese on each serving.

  7. Relax and be comforted.
