Recipe Ingredients for Jannid's New Potatoes and Peas

2 lbs new potatoes
2 c peas
1/4 c onion, chopped
2 T butter
2 T olive oil
1/8 t salt
1/8 t black pepper

Recipe Directions for Jannid's New Potatoes and Peas

  1. Halve the new potatoes unless they are quite small. Place in a large pot with enough water to cover the potatoes and a bit of salt and a couple pinches of sugar which I am told is why the potatoes cook up so lovely - as the water is poured off I decided not to count the few grains of sugar in the recipe. Boil about 15-20 minutes until they are easily pierced with a fork but still firm - do not over cook. Drain in a colandar.

  2. If you use frozen peas, nuke in water with a pinch of sugar and salt until they are hot and then dump them over the potatoes to drain.

  3. in a large pan, melt the butter and olive oil. Saute the chopped onion for a few minutes til soft. Add salt and pepper to taste and saute another minute or two.

  4. Add the potatoes and peas to the pan and toss til the veges are coated and hot (in case they were allowed to cool).

  5. Place in a beautiful serving bowl and enjoy!
