vegetarian version of regular fajitas.

Recipe Ingredients for Jannid's Mushroom Fajitas

2 mushrooms, portobello
1/2 c balsamic vinegar
12 garlic cloves, minced
1 c onions, sliced
1 c sweet red pepper
1 T olive oil
4 whole wheat tortillas
1 Avocado
1 T lime juice
1/8 t garlic
1/16 t salt
1 pepper, jalapeno, chopped
1 T cilantro, chopped

Recipe Directions for Jannid's Mushroom Fajitas

  1. Place portobellos, vinegar, and most of a jar of garlic in a ziplock bag. Marinate for an hour or two.

  2. Sautee onions and sweet red pepper in olive oil til lightly browned.

  3. Mash the avocado with juice from a fresh squeezed lime and mix with garlic, pinch of salt, jalapeno, and cilantro.

  4. Drain and grill the portobellos, slice, and serve with the other veges inside tortillas.
