adjust proportions to your liking, eggplant is very low in calorie, even a second pat of butter only raises the calories to 90 per serving or use olive oil as you prefer. The non-stick pan is important as initially the eggplant will absorb the butter, but it will also exude liquid as it cooks. Good with brown rice.

Recipe Ingredients for Jannid's Japanese Eggplant Saute

1 T butter
1/2 c onion, chopped
4 c Japanese Eggplant, thinly sliced
2 tomatoes, chopped
1/8 t black pepper
2 t garlic, pressed

Recipe Directions for Jannid's Japanese Eggplant Saute

  1. in a large non-stick pan, melt butter

  2. saute the onion and garlic til soft, then add the eggplant - approximately 2 Japanese eggplants quartered lengthwise and then thinly sliced. Saute til the eggplant is almost done. Stir every few minutes.

  3. add the tomatoes and black pepper - and salt if you do not need to watch your salt. If you don't have garlic cloves you can sprinkle in some garlic powder at this stage instead. Stir until the mixture is hot, then serve.
