a non-stick pan helps so you don't have to add much oil. Alternatively to sauteing the green beans, you may want to steam them separately and then toss the crisp tender beans to the prosciutto and onions.

Recipe Ingredients for Jannid's Green Beans with Prosciutto

2 oz. prosciutto
1 t olive oil
1/2 cup chopped onion (1/2 of a medium)
8 oz mushrooms, sliced
1 lb. green beans (fresh and trimmed, about 3 cups)
1 dash ground black pepper

Recipe Directions for Jannid's Green Beans with Prosciutto

  1. Heat a large, non-stick skillet over medium-high heat and add prosciutto. Cook about three minutes, or until crisp. Remove the bacon, cool, crumble, and set aside.

  2. Add 1 t olive oil, onion, and mushrooms to the skillet. Sauté over medium heat, stirring frequently, about 4-5 minutes, or until onions are translucent and mushrooms are tender.

  3. Add the green beans, and sauté for approximately 6 minutes or until the green beans are crisp-tender. They should be fork-tender, but still maintain a slightly crisp bite.

  4. Return the prosciutto to the pan, season with a dash of ground black pepper, and toss together.
