This is a de-fatted version of Martha Stewarts. Haven't made it yet and think it may need another herb - any ideas?

Recipe Ingredients for Jannid's Green Beans with Poblano

1 T extra-virgin olive oil
1 c onion, thinly sliced
4 t garlic
1/2 c sweet red pepper
6 c green beans
1 pepper, Poblano
3/4 cup water
1/2 t salt
1/4 t black pepper

Recipe Directions for Jannid's Green Beans with Poblano

  1. Heat oil in a large saute pan over medium-high heat. Add onions and cook, stirring frequently, for 5 minutes. Reduce heat to medium and cook, stirring occasionally, until beginning to caramelize, about 10 minutes.

  2. Add garlic and saute about 2 minutes. Add green beans (trimmed if fresh), chiles (de-veined de-seeded and sliced), water, salt, and pepper, and bring to a boil. Cover, reduce heat, and simmer until green beans and chiles are tender and liquid has evaporated, 20 to 25 minutes. If the beans are not done and the water is evaporated, add a little more.

  3. Serve immediately.
