grill outside over coals. Lower the calories by using more mushroom than steak and letting the manly man that grilled the meat eat more of the steak and consume more of the calories!

Recipe Ingredients for Jannid's Fajitas

3/4 pound flank steak
2 mushrooms, portobello
1 c balsamic vinegar, divided
12 garlic cloves, minced, divided
1 t liquid smoke
1 c onions, sliced
1 c sweet red pepper
1 T olive oil
6 whole wheat tortillas
2 Avocado
1 T lime juice
1/4 t garlic
1/16 t salt
1 pepper, jalapeno, chopped
1 T cilantro, chopped

Recipe Directions for Jannid's Fajitas

  1. put flank steak in a ziplock bag and add most of a jar of minced garlic, liquid smoke, and 1/2 of the vinegar. Seal, and turn to coat. Marinate for 2 hours.

  2. Put whole portobellos in a ziplock bag, add the other 1/2 of the vinegar and the rest of the garlic. Seal, turn to coat and marinate for 1 - 2 hours.

  3. Can always add more garlic and more vinegar if you think it looks insufficient.

  4. When done marinating, drain and grill til done (use any available manly man as he knows how long this takes).

  5. While grilling, saute the onions and sweet red pepper in olive oil with a pinch of salt til beginning to brown.

  6. Halve the avocado, scoop out the seed, then scoop out the pretty green stuff inside. Mash with a fork, squish one whole lime over it, add garlic, pinch of salt, jalapeno, and cilantro.

  7. Slice the steak and portobellos, serve with sauteed veges and guacamole on a whole wheat tortilla.
