not particularly low cal, so just watch the serving size. 12 generous servings. If cooked in the bird, use an oven thermometer and make sure the middle of the stuffing reaches 165 degrees F. Then you don't need to worry about bacteria.

Recipe Ingredients for Jannid's Cornbread Sausage Stuffing

1/2 lb pork sausage
1 large onion, chopped
1 c celery, chopped
1 t sage, dried
1 T poultry seasoning
1/2 t thyme
1/4 t black pepper
10 c cornbread, crumbled
2 c stock, chicken

Recipe Directions for Jannid's Cornbread Sausage Stuffing

  1. The day before, prepare one 8 or 9 inch pan of cornbread - leave it out uncovered overnight to dry, crumble in the am. Tear bread into small pieces and leave out to dry overnight.

  2. Cook the sausage in a large skillet over medium-high heat til nearly done. Add onions and celery and cook until veges are tender, stirring occasionally.

  3. In a large bowl, combine the sauteed veges, herbs, ground sausage, crumbled cornbread and bread cubes. I like to adjust pre-cooked seasonings by the aroma - does it smell like it needs more thyme? Then add some or whatever else seems necessary.

  4. Add about 1 1/2 C of the stock; mix well making sure it is not too wet, add more if necessary, and lightly stuff the bird. Once the bird is stuffed with warm stuffing, immediately roast it - the pre-warmed stuffing helps get the temperature up faster so it is done when the turkey is.

  5. Any mix that does not fit in the bird, add more stock and bake as directed below, that way you can make both the in-bird and out-of-bird people happy.

  6. For the part cooked in the turkey, you want the mix to be only just moistened as the bird will add juices. For the part in the pam sprayed pan, add a little poultry seasoning and more stock until it is very moist and bake at 375 for about 45 minutes.
