Jannid's Carbonara Recipe

all items should be adjusted to taste. If you use more Romano, you are likely to need more olive oil to keep the pasta from sticking. More can be added when it is mixed together.

Recipe Ingredients for Jannid's Carbonara

6 T olive oil
1/2 onion, chopped
8 oz prosciutto
3 T garlic, chopped
1/2 t oregano
1/4 t black pepper
1/4 t red pepper flakes
3 eggs
5 oz Romano cheese
1 c mozzarella
1 pound spaghetti, cooked

Recipe Directions for Jannid's Carbonara

  1. Bring water to a boil in a large pot to cook the spaghetti.

  2. Chop the onion and prosciutto. In a separate bowl, beat the eggs with a fork.

  3. While pasta is cooking, saute the chopped onion in olive oil til softened, add all spices, garlic, and prosciutto and continue to saute til the prosciutto crisps a bit.

  4. Drain the pasta and return to hot pot and immediately stir in the eggs - the eggs will cook in the hot pasta. Then add the olive oil mixture. Finally add the Romano cheese. If it is too thick and sticky you may want to add some more olive oil. This will take some mixing and two forks are suggested.

  5. Transfer to a serving dish that is either microwave or oven proof. Sprinkle with the mozzarella and either nuke or bake a few minutes in the oven just til the cheese melts but does not brown.
